From purple to pink to orange, I adore colorful smoothies. When it comes to healthy smoothies for breakfast, a green smoothie is my top choice. For this green smoothie recipe I started with a base of coconut milk to keep it vegan and dairy free. Then I added mango for sweetness and baby spinach for a pop of green color and fresh flavor. For a nutritional boost, I included a spoonful of both sesame seed and hemp seed.
Coconut Milk Green Smoothie Recipe
3/4 cup cold water
1/4 cup unsweetened full-fat coconut milk
1 cup frozen mango chunks
1 cup fresh baby spinach
1 teaspoon white sesame seeds
1 teaspoon hemp seeds
Add water, coconut milk, frozen mango, spinach, sesame seeds and hemp seeds to blender container. Cover and blend until smooth.
Makes 1 big serving or 2 small servings (about 2 cups total)
Tip: Fresh baby kale can be used in place of the spinach.
