You guessed it, everything that goes into this green juice recipe is fresh and, of course, green. The juice starts with cucumber and green apple, and adding a large handful of fresh parsley amps up the green color. A squeeze of lime intensifies the sweet-tart flavor of the cooling green juice.
Cucumber Apple Green Juice Recipe
1 large slicing cucumber, peeled and seeded, ends removed
2 large green apples, cored
Large handful fresh flat-leaf Italian parsley (leaves and stems)
1 medium lime
Cut cucumber and apple into pieces to fit the feed chute of your juicer. Juice cucumber, parsley and apples into a glass container. (Follow manufacturer’s directions to determine the optimal juicer speed and the order for juicing.) Cut lime in half and squeeze juice from lime into the green juice mixture. Serve over ice.
Makes about 2 to 2 1/2 cups, depending on juiciness of fruit and efficiency of juicer
Tip: My juicer doesn’t extract juice from citrus very well, so I prefer to squeeze the lime by hand. If your juicer does a good job on citrus, peel the lime and run it through your juicer.
