Strawberry Cucumber Juice Recipe

Strawberry Lime Cucumber JuiceOh how I adore this pink drink. Strawberry Cucumber Juice tastes amazing, especially on sweltering summer days. The base of the drink is English cucumber, a juicing workhorse that gives up an abundance of cooling cucumber juice. Strawberries add a striking pink color, while an apple or two adds sweetness to balance the bite of fresh ginger and lime. Fresh Strawberry Cucumber Juice Recipe
Ingredients:
1 large English cucumber, peeled, ends removed
1 or 2 medium to large apples, cored (use 2 if you want a sweeter tasting juice)
2 cups large fresh strawberries, tops removed
1 inch piece fresh ginger, peeled
1 medium lime
Ice cubes
Equipment:
Juicer

Cut cucumber and apple into pieces to fit the feed chute of your juicer. Juice strawberries, cucumber, apple and ginger into a glass container. (Follow manufacturer’s directions to determine the optimal juicer speed and the order for juicing.) Cut lime in half and squeeze juice from lime into the cucumber juice mixture. Serve over ice.

Makes about 2 1/2 to 3 cups, depending on juiciness of fruit and efficiency of juicer

Tip: My juicer doesn’t extract juice from citrus very well, so I prefer to squeeze the lime by hand. If your juicer does a good job on citrus, peel the lime and run it through your juicer.Strawberry Cucumber JuiceMore fresh juice recipes:

Fresh Cucumber Pineapple Juice Recipe

Fresh Pineapple Cucumber JuiceLonger days and warm, sunny weather move up my happiness meter. It feels so good to have more energy and get things done. Small things like taking a walk, taking a nap, and finally dusting off my juicer. I’ve been in my apartment for nearly a year and have managed to ignore the juicer I spent years wanting and countless hours researching. What gives? I’m a big fan of fresh juice, but not too keen on the cleanup. Also, I live near a fresh pressed juice shop that makes amazingly delicious juices. But, it’s less expensive and more customizable to make your own juice. Best of all, juicing is a way to clear out the produce drawer. That’s a huge benefit since I hate wasting food.

This ultra refreshing juice is a simple mix of fresh pineapple, cucumber and lime. It’s a bit pulpy, a bit sour and oh-so-sweet from the pineapple. Next time I may add a few sprigs of mint or a knob of ginger for even more flavor.

1 medium fresh pineapple, peeled and cored
1 medium lime
Ice cubes

Blood Orange Chia Drink Recipe

Sparkling Chia JuiceWhat a weekend! The sun was out, the temps were up and this and every other Minnesotan broke free from winter hibernation.

Despite the promise of spring, there were still lingering signs of winter like slushy ice on the lakes and blood oranges in my fridge. I took care of the blood oranges by juicing them and mixing up a few drinks like this simple sparkling juice with chia seeds. (Of course, I also made a cocktail that I’ll share later this week.)

Blood Orange Chia Drink Recipe
1/2 cup cold water
1 tablespoon chia seeds
1 cup blood orange juice, chilled
1 cup sparkling water, chilled (I used LaCroix grapefruit flavor)
Ice cubes

To make chia gel, combine cold water and chia seeds in a small bowl. Let stand at room temperature for about 10 minutes, stirring occasionally, until chia seeds soak up the water and form a gel.Chia Seed GelDivide chia seed gel between 2 glasses. Top with blood orange juice and sparkling water. Drop in a few ice cubes and serve with straws to stir the drink and suck up the chewy chia seeds.

Makes 2 drinks
