Coconut Milk Overnight Oats Recipe (vegan)

Peach Vegan Overnight OatmealNo time to make breakfast in the morning? No problem. Stir together a bowl of overnight oats the night before and you’ve got a healthy head start on the day.

Here’s a recipe for vegan overnight oatmeal made with toasted oats, coconut milk, pure maple syrup, cinnamon and chia seeds. The oats soften in the fridge overnight, and are best eaten cold with a generous topping of fresh fruit and hemp seeds.

Coconut Milk Overnight Oats Recipe (vegan)
1/4 cup old fashioned oats, toasted*
1 teaspoon chia seeds
1/8 teaspoon ground cinnamon
few grains fine sea salt
1/4 cup full fat coconut milk
1/4 cup water or nut milk (almond or cashew)
1 teaspoon pure maple syrup
1 fresh ripe peach, cut up
1 to 2 teaspoons shelled hemp seeds

In a small bowl, combine oats, chia seeds, cinnamon and salt. Add coconut milk, water and maple syrup; stir well. Cover and refrigerate overnight to allow oats to absorb liquid and soften. Stir well before eating; top with peaches and hemp seeds.

Makes 1 serving

*I prefer using toasted oats when making overnight oatmeal. To toast oats, heat oven to 350 degrees F. Spread 2 cups old fashioned oats on a large rimmed baking pan. Bake 5 minutes; stir. Bake 5 to 8 minutes more until oats are lightly toasted. Cool completely. Store toasted oats in an airtight container at room temperature.

-The recipe is easily doubled or tripled. Overnight oats will keep up to 2 days.
-The oatmeal mixture is very lightly sweetened, and the fruit topping is important to the overall flavor. If you prefer sweeter oatmeal, drizzle with additional maple syrup before eating.
-If peaches aren’t in season, top with your favorite fruit like mixed berries, banana or mango.

Peach Frozen Yogurt Smoothie Pops
You don’t need a straw (or glass!) to enjoy these smoothie pops. Simply blend your favorite smoothie ingredients and freeze in popsicle molds. Here I’ve whirled together creamy Greek yogurt with fresh peach chunks, banana and a squeeze of honey.

Peach Frozen Yogurt Smoothie Pops Recipe
1 cup fresh ripe peach chunks (I buy organic and leave the peel)
1 medium banana, cut into chunks
1 cup (8 ounces) plain Greek yogurt (full fat works best)
1 to 2 tablespoons honey or pure maple syrup
1/4 teaspoon pure vanilla
Popsicle molds
Foil squares
Wooden craft sticks

Add peach chunks, banana, Greek yogurt, honey and vanilla to blender container. Cover and blend until smooth. Pour blended mixture into popsicle molds. Cover tops of molds with foil; insert wooden craft stick through foil. Freeze until solid, about 6 hours.

Makes 6 smoothie pops

Tip: The amount of honey needed depends on the ripeness of the fruit. Start with 1 tablespoon and taste after blending the mixture to adjust for sweetness.

Avocado Peach Vegetarian Chopped Salad Recipe

Vegetarian Chopped SaladI love BIG salads. This chopped salad features the best of summer. It starts with a bed of greens, and gets better when you pile on fresh toppings like cool and crunchy cucumber, juicy peaches and fresh basil. Add some ripe avocado and roasted sunflower seeds and you’ve got one tasty salad.

Avocado-Peach Vegetarian Chopped Salad Recipe
1 head heart of romaine lettuce, chopped
1 medium ripe peach, pitted and cut into chunks
1 small Persian cucumber, chopped (peel, if desired)
1/2 a medium ripe avocado, peeled, pitted and chopped
2 tablespoons shredded fresh basil leaves
2 tablespoons roasted sunflower seeds (I use unsalted)
2 teaspoons extra virgin olive oil
1 teaspoon fresh lemon juice
fine sea salt and freshly ground black pepper

Place chopped lettuce in a large bowl. Arrange peach, cucumber, avocado, basil and sunflower seeds on bed of lettuce. Just before serving, drizzle salad with olive oil and lemon juice and toss to coat. Season to taste with salt and pepper.

Makes 1 BIG salad
