What a weekend! The sun was out, the temps were up and this and every other Minnesotan broke free from winter hibernation.
Despite the promise of spring, there were still lingering signs of winter like slushy ice on the lakes and blood oranges in my fridge. I took care of the blood oranges by juicing them and mixing up a few drinks like this simple sparkling juice with chia seeds. (Of course, I also made a cocktail that I’ll share later this week.)
Blood Orange Chia Drink Recipe
1/2 cup cold water
1 tablespoon chia seeds
1 cup blood orange juice, chilled
1 cup sparkling water, chilled (I used LaCroix grapefruit flavor)
To make chia gel, combine cold water and chia seeds in a small bowl. Let stand at room temperature for about 10 minutes, stirring occasionally, until chia seeds soak up the water and form a gel.Divide chia seed gel between 2 glasses. Top with blood orange juice and sparkling water. Drop in a few ice cubes and serve with straws to stir the drink and suck up the chewy chia seeds.
